This galley consist of the treats that I have made in the past and used as baking learning journal. I have been baking a lot lately hence the page is getting longer and longer almost every week. New York Cheesecake

Standard ingredient

Description: I have baked so many cheesecake, and Philadelphia is the only brand I would go for, and it has to be regular, no less fat version.

 

Standard base - graham cracker crumb

Description: Graham cracker crumb pressed into pan and baked.

Lots of batter!

Description: Five pack of creamcheese is a lot, the batter almost ready the top part of the beater attachment.

Let's fill the pan

Description: The batter almost fill to the top of the pan.

Hmm.... flat

Description: The cheesecake it flat, but not as brown as I normally see.

 

It cracks!

Description: I should have put the cheesecake back to the oven when I see that big part of the center is still jiggle. Next time I would bake until the center 2 inches diameter jiggle.

Almost perfect

Description: The cheesecake has the right height, and look quite perfect except for the crack center.

Nice edge browning

Description: The side has nice browning as well, which mean it didn't stick too much to the side of the pan.

Cover up

Description: New York cheesecake normally serve with strawberry topping. I have strawberry glaze in my freezer, so I decided to use it.

Oozzing glaze

Description: The glaze color is a bit too red, look kind of fake, but having part of the glaze ooz to the side make it looks good enough to eat regardless how red the glaze look!

Finished cake - Baby boy shower cake

Description: The cake base is carrot cake with creamcheese frosting. I used orange and green color border to represent the carrot color.

 

Cake top - front

Description: Since the mone is having a baby boy, I thought a cute little boy dress in clown/pj shirt would be cute.

Description: The proportion of the little figure seems just right.

Cake top - back

Description: The back is a bit hutch and straight because the figure was dry on its back to prevent further spreading and shortening because of the fondant medium

Description: My gumpaste dusting technique come in handy. On other thing I learn from this cake is frilling the collar.

Piped leaves

Description: The side of the cake required piped holly leaves

Description: I still have problem getting pointy leaves through piping!

Description: The leaves looks like plastics.

Description: Look closer and you can see the vein.

Description: The leaves are colored with dusting powder.

Description: The steamed leaves has a gloss finish, looks pretty nice.

Holly cake!

Description: The first variety has only poinsettia on the cake.

Description: Poinsettia flower added to the side too.

Different variety

Description: The second variety has some berries scatter around. The berries doesn't make mush different, and it takes longer time to make small berries too.

Description: The color of the poinsettia looks nice, next time should try to learn gumpast poinsettia.

Description: For the second variety, berries were scatter on the side of the cake too.
